Nutritional Highlights: Technically a fruit the tomato is best known for its high Lycopene content. It is also an excellent source of fibre and contains significant amounts of vit C, vit K and B5 B3, B6 and folic acid.

 

tomateHealth Benefits: Tomatoes contain a phyto-chemical called Lycopene, which has been shown to be useful in cancer prevention, especially, breast, prostate, lungs, colon and skin. The amount of lycopene, which is linked to the colour red, varies greatly depending on variety and ripeness. Lycopene appears to be quite stable in cooking so is still present and rather more concentrated when the tomatoes are cooked (even in tomato Ketchup!!)
